Braised Pork Rib with Pumpkin

1 lb pork ribs
400g pumpkin - peeled an cut into large cubes
3 cloves garlic - minced
1 tsp minced ginger
1 tsp sesame oil 
1 cup water.
vegetable oil

1 tbsp brown sugar
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil

  1. Heat up oil in a pan.  Fry garlic and ginger till aromatic.
  2. Add pork ribs and fry for 1 - 2 minutes.
  3. Drizzle sauce and do a quick stir fry.
  4. Add enough water to cover pork ribs and bring to a boil.  Switch to low heat and simmer for 30 to 40 minutes or till pork is tender.
  5. Add pumpkin and simmer for another 10 minutes. Add salt to taste.
  6. Drizzle sesame oil and sprinkle chilli flakes.  Mix well.
  7. Ladle into serving bowl and serve warm.
