Snow Fungus Winter Melon Dessert (雪耳冬瓜糖水)

1 small pc of snow fungus (rehydrate in water to soften)
6 pcs winter melon strips
10 pcs dried longan
10 pcs gingko nuts (cooked)
1 tsp wolfberries
2 strips pandan leaves (knotted)
2 bowls of water

  1. Trim the hard portion of the snow fungus and cut into small pieces.
  2. Bring water to boil and add pandan leaves, winter melon strip and dried longan.  
  3. Reduce heat and simmer under medium low heat for 20 minutes.  Add gingko nuts and wolfberries and boil for another 5 minutes.
  4. Dessert is ready to be served, warm or chilled.
