1 small bowl of rotini pasta
handful of pine nuts
2 cloves garlic - chopped
1 tbsp chopped onion
5 prawns - peeled
handful of wild mushrooms - soaked, drained and cut into small pieces
8 white mushroom - cut into halves
salt and black pepper to taste
- Cook pasta according to package instructions and set aside.
- Heat up 1 tbsp olive oil in a pan. Saute garlic and onions till aromatic.
- Add mushroom and saute over medium heat till mushroom is browned.
- Add prawns and fry until just cooked.
- Add more oil if needed. Add pine nuts and toss till evenly mixed.
- Pour cooked pasta into the pan. Sprinkle salt and pepper and toss to mix well.
- Ladle into a serving plate and serve warm.
