Fish Porridge/Congee

Ingredients
1 cod fish fillet - sliced thickly
few slices of ginger - julienned
2 cloves garlic - lightly smashed
1 tbsp preserved radish
1 cup rice grain - washed
5 cups of water or more

Marinade for fish
1 tbsp rice wine
salt and pepper to taste
1 tbsp soy sauce
1 tsp sesame oil

Toppings
fried shallot
fried shallot oil
parsley

Grilled Prawns on Skewers


Ingredients
8 medium-sized prawns - peeled and deveined, leave tail on
8 cherry tomatoes
2 jalepeno - cut into small square pieces
1/4 white or red onion - cut into small square pieces
sprinkle of salt
dash of pepper
dash of paprika
oil for brushing
4 wooden skewers (soaked in water for 20 minutes)

Grilled Corn on the Cob

Ingredient
2 ears of corn
salted butter

Braised Pork Belly with Tau Pok


Ingredients
12 pieces of tofu puff (tau pok) - parboiled in boiling water and drain
200g pork belly - cut into pieces
2 eggs (cooked and peeled)
2 slices ginger
2 cloves garlic - lightly smashed 
1 tbsp rice wine
1 tbsp soy sauce
1 1/2 tbsp dark soy sauce
1 tbsp sweet thick soy sauce
pinch of sugar
salt to taste
1 tbsp cooking oil

Spices
1 small piece cinnamon
2 cloves
1 star anise
2 pieces chuang xiong

Bird's Nest Soup Dessert


Ingredients
2 pieces of bird's nest (already cleaned of feathers etc)
4 pieces hua qi sheng (about 3cm in length, sliced)
handful of wolfberries
rock sugar to taste
2 cups water

Apple Pie

Ingredients
2 cups of flour
1 tsp salt
1 stick unsalted butter (sliced)
5-8 tbsp of cold water
1 egg (for brushing) 


Filling
1 tbsp lemon juice
1/3 cup white sugar
1/3 cup brown sugar
1/4 tsp salt
1 tsp cinnamon
3 cloves (ground)
1/2 tsp cinnamon powder
1 tbsp flour
4 - 6 medium-sized apples (i use granny smith)

Crispy Chinese Roast Pork (脆皮烧肉)


Ingredients
2 medium slab of pork belly (abt 800g)
1 tsp garlic powder
1 tsp white pepper
1 tsp 5 spice powder

For brining the meat
1 tsp salt + 1 tsp sugar

For scalding the rind
2 cups water + 2 tbsp vinegar

Steamed Grouper (清蒸石斑鱼)

Ingredients
1 grouper steak (1.2 lb)
2 stalk green onion - cut into 5cm length
1 tomato - sliced
1 piece ginger - julienned
1 fresh red chilli or chilli padi
salt to taste
1 tsp sesame oil
2 tbsp rice wine
1 tbsp soy sauce
1 tsp fried shallot oil
parsely for garnish
