Baked Red Potatoes

4 organic red potatoes - cleaned and cut into quarters
1 tbsp olive oil
1 tsp dried basil leaves
salt and pepper to taste
1 tbsp unsalted butter - to be melted

  1. Coat the potatoes with salt, pepper, olive oil and dried basil leaves.  Set aside for 30 minutes.
  2. Preheat toaster oven at 380 degrees F for 1 minute.  Place the potatoes onto the tray and baked for 35 - 45 minutes until golden brown and crisp.
  3. Remove from oven and drizzle melted butter over the baked potatoes.
