Thai Chicken Noodle Soup

1 packet fresh pad thai noodles
1 chicken breast - sliced 
1 pot ikan bilis stock or chicken stock
2 tbsp tamarind water - soaked tamarind in warm water, discard seeds and use the soaked water.
handful of beansprouts
handful of peanuts - roughly chopped
handful of parsley - roughly chopped
chilli flakes
salt and pepper to taste
2 tbsp fish sauce


  1. Bring the pot of anchovy or chicken stock to a boil.  Add fresh noodles and sliced chicken breast.
  2. Cook for a few minutes or till noodle is tender.  Add seasonings and beansprouts.
  3. Ladle into serving bowls and garnish with chopped parsley, peanuts and chili flakes.
  4. Serve with some freshly squeezed lime juice if desired.
