1 packet fresh pad thai noodles
1 chicken breast - sliced
1 pot ikan bilis stock or chicken stock
2 tbsp tamarind water - soaked tamarind in warm water, discard seeds and use the soaked water.
handful of beansprouts
handful of peanuts - roughly chopped
handful of parsley - roughly chopped
salt and pepper to taste
2 tbsp fish sauce
- Bring the pot of anchovy or chicken stock to a boil. Add fresh noodles and sliced chicken breast.
- Cook for a few minutes or till noodle is tender. Add seasonings and beansprouts.
- Ladle into serving bowls and garnish with chopped parsley, peanuts and chili flakes.
- Serve with some freshly squeezed lime juice if desired.
