Fried Prawns with bean paste and ketchup (干烧虾)

20 large prawns - cleaned and deveined
1 tbsp chopped garlic
2 tbsp korean fermented bean paste
2 tbsp tomato ketchup
cornstarch solution
salt to taste
cooking oil

  1. Pan fry prawns till almost cooked.  Set aside.
  2. Using the remaining oil, fry the garlic till aromatic.
  3. Add hot bean and ketchup and mix well.
  4. Return fried prawns to the pan.  Sprinkle salt and stir to coat prawns with the sauce.
  5. Add cornstarch solution to lightly thicken the sauce.  Mix well.
  6. Ladle into a serving plate and garnish with some chopped parsley.
  7. Sprinkle some dried chilli and fried peanuts for a spicier and nutty dish!
  8. Serve warm with rice.
