Duck Confit

  Delicious duck confit courtesy of my home chef :P

 
 


 Ingredients

2 duck leg quarters
1 tbsp black peppercorn
1 tbsp salt
1 tbsp coriander seeds
1 bulb garlic - halved horizontally
few slices ginger skin on
4 dried chillies
1 tbsp duck oil - rendered from other parts of the duck
 
Method
  1. Pound salt, coriander seeds and black peppercorn. Season duck leg quarters with the pound uningredients for 12 hours or overnight.
  2. Shake off seasoningk ks. Place duck in slow cooker.  Add ginger, dried chillies and halved garlic.
  3. Slow cook for 4 to 5 hours until meat is tender.
  4. Broil in oven until skin is crisp and golden,
  5. Enjoy the delicious duck confit with baked potatoes and some salad greens.
