Pickled Mango

1 large green mango
2 cups distilled vinegar
1/2 cup sugar
1/4 cup salt

  1. Peel and slice mango. Place the mango slices in a glass container.
  2. In a pot, boil vinegar, salt and sugar.
  3. When sugar and salt are dissolved, turn off heat and let it cool to lukewarm temperature.
  4. Pour over sliced mango.
  5. Let it stand for several hours before storing it into the refrigerator.
