2 cups rice - washed and drained
2 1/2 cups coconut milk
1/2 cup pandan juice
salt to taste
2 fried eggs
few slices luncheon meat
some sambal ikan bilis
- Blend pandan leaves with water in a blender. Sieve and save the pandan juice.
- Put rice, coconut milk, pandan juice and salt in a rice cooker.
- Pan fry luncheon meat slices and fry the eggs.
- When rice is cooked, scoop up onto a plate and assemble all other ingredients.
- Serve nasi lemak with sambal belachan and cucumber slices
