Braised Winter Melon with Soy Sauce (红烧冬瓜)

1/4 winter melon - remove seeds and cut into cubes
1 tbsp chopped garlic
chopped green onion
1 tbsp soy sauce
1 tsp dark soy sauce
1 tsp oyster sauce
small piece rock sugar
vegetable oil

  1. Heat up oil on low heat.  Add rock sugar to melt.
  2. Pan fry winter melon cubes till lightly brown.  Drain and set aside.
  3. Add some more oil.  Fry half of the chopped garlic.  Drizzle soy sauce, dark soy sauce and oyster sauce.
  4. Add fried winter melon pieces.  Do a quick stir fry.
  5. Add some water to braise till desired tenderness.
  6. Ladle into bowl and garnish with the rest of the chopped garlic and green onion.
  7. Serve warm with rice.
