Ingredients1 free range chicken (i use half of it)
rind of 1 large lemon
juice of 1 large lemon
few springs of parsley - chopped
1 tsp dried rosemary - pounded
freshly grounded black pepper
2 tsp dijon mustard with seeds
1 1/2 tsp sea salt
1 tbsp soy sauce
- Wash chicken and pat dry. Marinate with all the ingredients for 2 hours or more.
- Preheat barbecue. When ready. Place chicken on grill. Cover and grill over medium heat for 30 to 45 minutes or until the internal temperature reads 165 degree F.
- Remove chicken from grill and let it sit for 10 minutes before chopping into pieces.
- Serve with chilli and some sliced cucumbers.
