BBQ Lemon Chicken with Herbs

1 free range chicken (i use half of it)
rind of 1 large lemon
juice of 1 large lemon
few springs of parsley - chopped
1 tsp dried rosemary - pounded
freshly grounded black pepper
2 tsp dijon mustard with seeds
1 1/2 tsp sea salt
1 tbsp soy sauce

  1. Wash chicken and pat dry.  Marinate with all the ingredients for 2 hours or more.
  2. Preheat barbecue.  When ready.  Place chicken on grill.  Cover and grill over medium heat for 30 to 45 minutes or until the internal temperature reads 165 degree F.
  3. Remove chicken from grill and let it sit for 10 minutes before chopping into pieces.
  4. Serve with chilli and some sliced cucumbers.
