Braised Claypot Chilean Sea Bass with Mao Gua









Ingredients
1 lb chilean sea bass - chopped into large pieces
1 mao gua - peeled and cut into large cubes
1 bunch bean thread  - soaked in water and drained
2 stalks green onion - cut into 2 inches length
8 tofu puff
1 tbsp chopped garlic
3 slices ginger 
salt and pepper
vegetable oil

Sauce
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp huatiao wine
1 tbsp black vinegar 
1 tsp sesame oil

Method
  1. Marinate fish with salt and pepper.
  2. Heat up oil in pan.  Pan fry fish till lightly brown.  Set aside.
  3. Add the remaining oil to a claypot, Fry garlic, ginger and white portion of green onion till aromatic.
  4. Drizzle soy sauce, oyster sauce and huatiao wine.
  5. Add 1 cup water and bring to a boil.  Add mao gua and tofu puff.  Cook till tender.
  6. Add pan fried fish pieces and bean thread and bring to a boil again.
  7. Add black vinegar, sesame oil and green portions of green onion and toss to mix well.
  8. Serve warm with rice.
