Ingredients
1 halibut steak
2 tomatoes - cut into quarters
2 slices of ginger - julienned
2 cloves garlic - chopped
half small onion - peeled and cut into thin slices
salt and pepper to taste
1 tbsp cooking oil
Sauce
1 tbsp rice wine
2 tbsp soy sauce
1 tsp sesame oil
Method
- Marinate fish with salt and pepper for 30 minutes or more.
- Heat up oil in wok. Fry fish for 5 to 7 minutes on each side. Set aside.
- Add a little more oil. Fry ginger over low heat till lightly brown. Set aside.
- Fry sliced oniion over low heat till lightly translucent. Add chopped garlic and fry till aromatic.
- Turn up heat to high and add sauce and tomatoes. Fry for a few minutes.
- Pour over fried fish and serve warm with rice.
