Pan Fried Halibut Steak with Tomatoes



Ingredients
1 halibut steak
2 tomatoes - cut into quarters
2 slices of ginger - julienned
2 cloves garlic - chopped
half small onion - peeled and cut into thin slices
salt and pepper to taste
1 tbsp cooking oil

 Sauce
1 tbsp rice wine
2 tbsp soy sauce
1 tsp sesame oil 

Method
  1. Marinate fish with salt and pepper for 30 minutes or more.
  2. Heat up oil in wok.  Fry fish for 5 to 7 minutes on each side. Set aside.
  3. Add a little more oil.  Fry ginger over low heat till lightly brown.  Set aside.
  4. Fry sliced oniion over low heat till lightly translucent.  Add chopped garlic and fry till aromatic.
  5. Turn up heat to high and add sauce and tomatoes.  Fry for a few minutes.
  6. Pour over fried fish and serve warm with rice.
