Stir Fried Vegetarian Noodles

a handful of dried chinese ramen
1 small red bell pepper - cut into strips
4 fresh shitake mushrooms - cut into strips
1 small white onion - sliced
1 tbsp minced ginger
dash of pepper
dash of sesame oil
vegetable oil
1 tbsp dark soy sauce
1 tbsp dark soy sauce
1 tbsp black vinegar

  1. Bring a pot of water to boil and cook noodles till al dente.  Drain and set aside.
  2. Heat up 1 tbsp oil in pan.  Saute mushrooms till aromatic. Remove from pan and set aside.
  3. Add onion and saute till slightly translucent.  Add ginger and saute till lightly browned.
  4. Add bell pepper, mushroom and cooked noodles.  Drizzle seasonings and do a quick stir fry.
  5. Add dash of pepper and sesame oil.  Fry to mix well.
  6. Ladle into a serving plate and serve warm. .
