200g pork ribs - blanched in boiling water and drained
1/4 of a winter melon - peeled, deseeded and cut into cubes
10 red dates (i ran out of them)
2 slices of ginger
1 small dried cuttlefish
2 dried scallops
salt to taste
1/2 pot of water
Method
- Bring the pot of water to boil. Add ginger slices, dried cuttlefish, dried scallops, red dates and pork ribs and simmer over medium heat for 45 minutes.
- Add winter melon cubes and continue to simmer for another 15 minutes. Add a little salt to taste.
- Ladle into a serving bowl and serve hot with rice.
