Grilled Salmon with toasted pine nuts and vegetables

 


Ingredients
1/2 lb salmon - marinate with a pinch of salt
some fresh leafy greens
handful of toasted pine nuts
2 tbsp mashed sweet potato
2 tbsp mashed avocado
6 cherry tomatoes
 
Method
  1. Heat up grill on high and brush some oil on grill grates.
  2. Place salmon on hot grill flesh side down.
  3. Grill for 4 to 5 minutes, flip over to skin side and continue to grill for another few minutes. 
  4. Place vegetables on a serving plate.
  5. Transfer grilled salmon to the plate.
  6. Enjoy with sides of mashed sweet potato, avocado and cherry tomatoes!

Braised opo squash with fish fillet


Ingredients
1/2 lb fish fillet
1 oppo squash
1 tsp chopped garlic
1 cup chicken stock
salt and pepper to taste
vegetable oil

Method
  1. Season the fish fillet with salt and pepper.
  2. Peel and cut the squash into large cubes.
  3. Heat up 1 tbsp oil in a pot.  Fry the garlic till fragrant.  Add in cubed squash.  Add chicken stock and bring to a boil.  Reduce heat to low.  Cover and let it sommer for 10 m minutes or until squash is tender.
  4. Heat up 1 tbsp oil in a pan.  Pan fry the fish fillet, few minutes on each side.
  5. When the squash is ready, place the fish fillet into the pot and enjoy this healthy and tasty meal.

Baked Teriyaki Salmon

 


Ingredients
2 tbsp soy sauce
1 tbsp mirin
1 tbsp sake
1 tbsp grated ginger juice 
sprinkle of sesame seeds
few tbsp water
a little cornstarch solution
 
Method
  1. Marinate salmon with soy sauce, mirin, sake and grated ginger juice for 30 minutes or more.
  2. Shake off excess marinade onto the plate for gravy use.
  3. Sprinkle sesame seeds on top of the salmon.
  4. Bake in the oven at 400 degree f for 10 minutes.
  5. Heat up the marinade.  Add some water and mix.
  6. Stir in some cornstarch solution to slightly thicken the sauce.
  7. Pour sauce over salmon and enjoy!

Quck and Easy Grilled Trout with Basmati Rice

Lightly grilled and fish was moist and tender.

Ingredients
1 fresh trout - cleaned
pinch of sea salt
pinch of freshly ground black pepper
pinch of paprika powder

Method
  1. Marinate the inner side of the trout with salt, pepper and paprika for 15 minuters or more.
  2. In the meantime, heat up weber grill on high.  
  3. Place fish on grates and grill for 5 minutes on each side.
  4. Enjoy the tasty grilled fish with a plate of tomato basmati rice.....simply cooked, simply delicious!

Grilled Salmon Fillet with Spice Rice






Ingredients
fresh wild salmon fillet
salt and pepper to taste

Spice Rice
1 cup of basmati rice
2 cups of water
1 tbsp coconut oil
1 slice of hutter
1 tbsp turmeric powder
2 tbsp diced onion
1 cardamon pod
10 curry leaves
3 cloves
1 star anise

1 halibut fillet
1 stalk green onion - trimmed end and cut into one inch length
some julienned ginger
1 tbsp soy sauce
1 tbsp rice wine
2 tbsp vegetable oil
1 tsp sesame oil
salt and pepper to taste

Claypot Fish with Zucchini and Spicy Korean Bean Paste




Ingredients
1 lb halibut fish meat
1/4 portion of a large zucchini - peeled and cut into 2 inch length
2 tbsp spicy korean bean paste
2 slices ginger
2 cloves garlic - chopped
8 fried tofu puff
1 stalk of green onion - ends trimmed and cut into 2 inch length 
salt and pepper to taste

Ingredients
halibut fish meat - cleaned and cut into large pieces
handful of french beans - ends trimmed and cut into 2 inch length
some cabbage - cut into pieces
1 eggplant - ends trimmed and cut into 2 inch length
8 pieces of fried beancurd puff
3 tbsp thai red curry paste
1 tbsp curry powder 
1 tsp turmeric powder
1 tbsp homemade sambal belachan
half onion - peeled and chopped
2 shallots - peeled and sliced
3 cloves garlic - chopped
1 large tomato - cut into slices 
coconut milk
cooking oil

Claypot Fish Head Soup






Very delicious claypot fish soup prepared by the hub.  A comforting hometown dish especially in the fall season, a soup that nourishes the body and the soul! Halibut collar was used but it tasted just as good as fish head. The natural milky taste of the soup and the tender fish meat of the halibut paired so well!

Otah Recipe





Ingredients
300g fish meat (I used firm cod fish fillet)
1 egg white
2 to 3 tbsp rice flour2 to 3 tbsp corn starch
4 tbsp coconut milk 
banana leaves (defrost the frozen leaves and washed
oil to brush banana leaves
toothpicks to secure wrapped otah

Spice Paste
15 dried chillies
one stalk lemongrass - soft part only, chopped finely
4 lime leaves - sliced thinly
200g shallots - peeled and chopped
20g galangal - peeled and chopped
10 candlenuts
15g belachan
1 tsp curry powder
1 tsp turmeric powder 
1 tsp coriander powder  1/3 cup oil

Easy Grilled Swordfish Fillet



Ingredients
1 lb swordfish fillet
1 tbsp chopped garlic
2 tbsp chopped green onions

Seasonings
salt and black pepper

Sauce
1 tbsp fermented beans with some sauce
