Half a packet chow mein (Guang dong noodles)
1 small piece of pork - cut into thin slices
3 tbsp of cooked small shrimps
4 dried mushrooms - soaked and cut thinly
1 carrot - peeled and julienned
1/2 cup shredded cabbage
3 eggs - pan fried and cut into strips
2 slices ginger
3 garlic cloves - chopped
1/2 small onion - sliced
2 stalks green onion - cut into 3cm length (white part only)
water
1 tbsp sesame oil
2 tbsp cooking oil
some toasted sesame seeds
Sauce
2 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp fish sauce
1 tbsp oyster sauce
salt and pepper to taste

Method
- Cook the chow mein according to the package instructions. Add sesame oil and toss to mix them evenly and to prevent them from sticking together.
- Heat up oil in a wok over medium heat. Fry the ginger, onion,. garlic and green onion till fragrant.
- Add pork, shrimps and mushrooms and fry till pork is almost cooked. Add cabbage, carrot and sauce and fry for another 1- 2 minutes.
- Add the cooked chow mein and enough water to mix with all the ingredients.
- Transfer to a serving plate and top with the fried egg and some toasted sesame seeds.
