Ingredients
1 lb halibut steak
1 tomato -cut into quarters
4 pcs tofu puff -blanced in hot water and squeezed dry
2 stalks lemongrass (white part only) - pound with back of knife
4 dried chillies
1 tsp minced ginger
1 tsp minced shallot
1 tbsp thai red curry paste
1/2 can thick coconut milk
2 tsp cooking oil
- Heat up cooking oil in pan. Saute the ginger, shallot, dried chillies and lemongrass till fragrant. Add curry paste and stir fry for a while. Add coconut milk and bring to a boil.
- Place halibut steak, tofu puff and tomato into the curry sauce.
- Cover and cook under medium heat for 10 to 15 mins or until fish cooked through. Serve hot with rice.
