Ingredients
2 pcs chicken leg quarters
2 chicken wings
Marinade
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp turmeric powder
1 tsp dried rosemary - pounded
1 tsp dried fennel seeds - pounded
1 tbsp soy sauce
1 tsp worcestershire sauce
1 tbsp dijon mustard
1/2 tsp paprika powder
1 tsp honey
rind of 1 lemon
juice of 1 lemon
Method
- Wash lemon and grate the peel. Set aside. Marinate the chicken pieces with all the ingredients and leave in the fridge overnight.
- Preheat oven to 400F. Place chicken pieces in baking tray and bake for 40 mins.
- Heat up any remaining sauce from the marinade. Add some roasted cashew nuts to the sauce.
- Serve the baked chicken pieces with the sauce and some sliced cucumbers.
