Stir Fried Szechuan Chicken


Ingredients
1 lb chicken drumstick/thigh - deboned and cut into bite-sized pcs
6 dried chilli
3 tbsp szechuan peppercorns
3 garlic cloves - minced
4 shallots - sliced
1 tsp minced ginger
1 tbsp cornstarch
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
2 tbsp cooking oil

Spaghetti with bacon & Cheese

Ingredients
1/2 lb thin sphagetti
2 pcs bacon (thinly sliced type)
5 tbsp frozen green peas
1 tbsp sliced shallot
1 tsp minced garlic
some chedder cheese
1 tbsp olive oil

Pan Fried Salmon with Tuscan Style Butter

Ingredients
1 lb salmon fillet
3 stalks asparagus - stem trimmed and cut into half
1 small carrot - cut thinly
2 tbsp flour
2 tbsp olive oil
2 tbsp tuscan style garlic butter (challenge brand)
salt and pepper to taste

Linguine with prawns in White Wine Sauce

Ingredients
8 oz linguine
8 medium-sized prawns - peeled and deveined
4 tbsp frozen green peas
2 shallots - minced
2 cloves garlic - minced
1/2 cup dry white wine
2 tbsp butter
dried italian herbs spice mix to taste
garlic salt and pepper to taste
2 tbsp olive oil

Mutton Curry

Hubby's first attempt at cooking mutton curry....yummy!

Ingredients
1 lb mutton meat (blanched with few slices ginger and 1 stalk green onion)
2 medium size potato - cut into bite-sized cubes (potato to meat 1/2 to 1 ratio qty)
2 medium size onion - chopped
1 medium tomato - chopped
1 inch ginger - mashed
3 clove garlic - mashed
2 green chilli - deseeded and cut lengthwise
3 curry leaves (i use bay leaves for substitute)
2 inch cinnamon stick
2 cloves
1 can coconut milk
2 tbsp lime juice
salt to taste

Si Shen Tang (四神汤)

Ingredients
300g pork ribs or chicken meat - blanced in boiling water.
4- 5 bowls of water
Huai Shan (淮山) -dry or fresh.  i use fresh huai shan
Qian Shi (欠实) 
Fu Ling (茯苓)
Xiang Lian (湘莲) 

Baked Trout with Tomyam paste


Ingredients
3 pcs of trout fish
1 tomato - sliced
1 bell pepper - sliced
red chilli - sliced into thin strips
1 tbsp tomyam paste
salt and pepper to taste
1 tbsp lemon juice - for drizzling

Fried Wonton Bundles

Ingredients
makes about 20 - 25 bundles
80g raw prawns - peeled, deveined and roughly chopped
80g skinless chicken meat - cut into small pcs
100g water chestnuts - drained and roughly chopped
2 garlic cloves - finely chopped
2 green onions - finely sliced
1 tsp oyster sauce
1 tbsp soy sauce
salt and pepper to taste

Shrimp & Chicken Sesame Toast

Ingredients
2 skinless boneless chicken thighs
50g cooked shelled shrimp
1 small egg - beaten
2 green onion - finely chopped
1 garlic clove - crushed
1 tbsp chopped fresh cilantro
1 tsp thai fish sauce
1/4 tsp pepper
1/8 tsp salt
5 slices of white bread, crust removed 
1/2 cup sesame seeds
oil for deep frying

Stir Fried Asparagus with XO sauce

Ingredient
1 bunch of asparagus - cut into 1.5 inch length
8 medium size prawns - peeled and deveined
1 tbsp minced garlic
1 tbsp XO sauce
salt to taste
cooking oil

Ingredients
2 pc of dover sole fillet - sliced thinly
1 avocado - peeled and mashed
panko bread crumb - for coating
salt and pepper to taste

Braised Chicken with Beech Mushroom

Ingredients
5 pcs of chicken wings (separate drumettes with wings)
1 packet brown beech mushroom - washed and patted dry
1 handful dried lily bulb - soaked in water to soften and drained.  Cut out hard end and tie into knots
1 handful dried black fungus - soaked in water to soften and drained.
1 tsp minced garlic

1 small pc lean pork meat - cut into long strips
5 pcs cremini mushrooms
1 red bell pepper - cut into strips
2 jalepeno - cut into strips

1 white onion - sliced
2 cloves garlic - peeled and minced
1 handful roasted cashew nuts

1 tbsp oyster sauce

Cast Iron Grilled Lemongrass Chicken Fillet

2 pieces chicken breast meat

4 baby carrots
2 stalks lemongrass - chopped finely

Ingredients
1 small bowl fried peanuts
1 tsp minced garlic
2 chilli padi - seeds removed and cut into small pcs
1/2 bowl basil leaves - cut into small pcs
