Dry ingredients
2 cups all purpose flour
3/4 cup sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
Wet ingredients
2 eggs
3/4 stick butter
1/4 cup oil
1/2 cup milk
1 tsp vanilla extract

Method
- In a large bowl, cream butter and sugar until light and fluffy. Add egg, one at a time and beat until incorporated into the mixture. Add in oil, milk and vanilla extract. Use a spatula to mix well.
- Preheat oven to 350 degrees F.
- Grease baking pan with butter.
- Boil the raisins for one minute and let stand for 10 minutes.
- Drain away the water. Set aside.
- Separate the dry and wet ingredients into 2 bowls.
- Mix them up in their own bowls.
- Combine them by pouring the dry ingredients into the wet ingredients.
- Stir in the raisins.
- Pour batter into muffin pan and bake 20 minutes till brown with crispy edges.
- When done, let cool and put them on cooling rack.
