Stir Fried Sesame Oil Chicken (炒麻油鸡)


Ingredients
1 lb chicken meat - chopped into pieces
1 small pc ginger - julienned
1 tsp dark soy sauce
2 tbsp soy sauce
2 tbsp water
2 tbsp sesame oil
1 tbsp cooking oil

Salted Fish with Chicken & Tofu Claypot ( 咸鱼鸡粒豆腐煲)

Ingredients
1 packet soft tofu - drained and cut into 1 1/2cm cubes
3 pcs of boneless skinless chicken drumsticks - cut into 1 1/2cm cubes
3 dried shitake mushrooms - soaked, drained and cut into 1 cm size (reserve the water)
15 snap peas
1 piece 4 x 4 cm salted fish - cut into 1 cm size
3 stalks green onion (white part only) - cut into 3cm length
2 slices ginger
2 cloves garlic - minced
1 tbsp shaoxing wine - for drizzling
cooking oil

Stir Fried Squid with Sambal Belachan Chilli

Ingredients
300g squid tubes - sliced horizontally into rings about 1/2 inch wide
2 celery sticks - sliced
1/2 medium onion - sliced
1 tsp minced ginger
2 cloves garlic - chopped
2 tbsp sambal belachan chilli
salt to taste
4 tbsp water
cornstarch solution
1 tbsp cooking oil

Stir Fried Spaghetti with Portobella Mushroom

Ingredients
8 oz angel hair spaghetti
1 portobella mushroom - cleaned and sliced
1 carrot - cut into strips
2 cups shredded cabbage
8 prawns - deshelled and deveined
2 eggs - beaten
1/2 onion - chopped
3 cloves garlic - chopped
1 shallot - chopped
1 tbsp toasted sesame seeds
1/2 cup chicken broth
1 tbsp fried shallot oil - for coating cooked spaghetti
3 tbsp cooking oil

Salmon Fish Head Curry

Ingredients
1 salmon fish head - washed and cleaned
1 tomato - quartered
3 pcs of tofu puff
1 eggplant/brinjal - sliced into 1 cm thick
1 tsp minced ginger
1 tsp minced garlic
2 tbsp chopped shallot
2 tbsp red curry paste
some curry leaves (i omitted this)
salt and pepper to taste
1 cup coconut milk
2 tbsp cooking oil

Stir Fried Frog's Legs

Ingredients
300g frozen frog's legs
3 slices ginger
1/4 onion - sliced
1 stalk green onion - cut into 2" length
2 tbsp cooking oil
4 tbsp water
cornstarch solution

10 to 12 bowls water

Fettucine with Artichoke


Ingredients
8 oz fettucine
10 fresh white mushrooms - cleaned and halved lengthwise
artichoke hearts - quartered (leftover from a salad)
cherry tomatoes - halved lengthwise
some chickpeas and beans (leftover frpm a salad)
1/2 medium onion - chopped
2 garlic cloves - chopped
1/2 cup dry white wine
1/2 cup fresh basil leaves - chopped
1 tbsp butter
2 tbsp olive oil
salt and pepper to taste

Sweet and Sour Chicken

Ingredients
1 lb boneless skinless chicken drumsticks or thigh (cut into 1" cubes)
1 cup of pineapple chunks (juice reserved)
1 tomato - cut into 1" cubes
1 green bell pepper - cut into 1" size

Braised Pork Belly & Sea Cucumber with Pumpkin

1lb pork belly - cut into bite-sized pieces
2 medium-sized sea cucumbers - pre-conditioned and cut into halves
1 small pumpkin - peeled and cut into bite-sized cubes

Easy Beer Bread

Homemade bread in under an hour

Ingredients
3 1/2 cups all-purpose flour (i use unbleached flour)
3 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
12 ounces beer
1 egg - beaten

Halibut with Spicy Bean Paste

Ingredients
1 lb halibut neck - cut into bite-sized pcs
4 tbsp frozen green peas
2 tbsp spicy bean paste(辣豆瓣酱)
2 shallots - sliced
2 cloves garlic - chopped
1 small pc ginger - minced
1 small red chilli - cut into small pcs
1/2 tsp sugar
salt to taste
1 cup water
1 tbsp cooking oil

Pan Fried Thai Spiced Fish Fillet

recipe adapted from 'what's cooking Thai' by Christine France

Ingredients
1 lb firm fish fillet (i use basa fish) - cut into bite-sized pcs
2 small red chilli - seeds removed
2 shallots - chopped
2 garlic cloves - chopped
2 fresh cilantro sprigs - chopped
1 tsp coriander seeds - grounded
1 tsp ground turmeric
1/2 tsp pepper
1 tbsp thai fish sauce
2 tbsp coconut milk
1 small egg - beaten
all purpose flour (for coating)
oil for pan frying

Pan Fried Cod Fillet with Mushroom Sauce

Ingredients
1 lb cod fish fillet
fresh shitake mushrooms - sliced
cabbage - shredded
carrot - shredded
1 tsp minced ginger
1 stalk green onion - cut into small pcs
salt and pepper to taste
cornstarch solution
1/2 cup water
2 tbsp cooking oil

Stir Fried Tofu with Pork Belly

Ingredients
200g pork belly - scalded and cut into small pcs
1 block of fresh tofu - cut into small rectangular pcs
4 dried red chillies
1 tbsp minced garlic
2 tbsp sliced shallot
1 tbsp cooking oil

Braised Pork with Mao Gua

Ingredients
300g pork ribs - blanched
1 mao gua - peeled and cut into cubes
1 pkt brown beech mushroom - washed and ends trimmed
2 slices ginger
2 cloves garlic - unpeeled
cornstarch solution
1 1/2 cup water
2 tbsp cooking oil

Marinade
1 tbsp soy sauce
1 tbsp huatiao wine
1 tsp sesame oil
1 tsp cornstarch
salt and pepper to taste

Sauce
1 tsp dark soy sauce
1 tbsp oyster sauce

Method
  1. Marinate meat for one hour or more.  Set aside.
  2. Heat up a large pan and saute the mushrooms until fragrant.  Add oil and stir fry pork ribs for one minute.  Add ginger and garlic and continue to stir fry for another minute.
  3. Add sauce and quickly stir fry for a while.  Add water to the pan, cover and let it simmer for 30 minutes.  
  4. Add melon to the pot and continue to simmer for 10 to 15 mins or until melon is cooked to desired softness.  Stir in cornstarch solution.  
  5. Ladle into serving plate and serve warm with rice.

Stir Fried Mixed Vegetables with Gingko Nuts

Ingredients
1 small bunch broccoli - cut into florets
2 long fried beancurd stick (tau kee)
1 carrot - peeled and sliced into 1 inch size
12 gingko nuts - cooked and boiled
3 pcs fresh shitake mushrooms - cleaned and sliced
1 tsp minced ginger
1 tsp minced garlic
1 tbsp cooking oil

Sweet potato with red bean dessert

Ingredients
1 sweet potato - peeled and cut into cubes
4 tbsp red beans - washed and soaked for 2 hours or more.
1 1/2 tbsp tapioca pearls
2 pandan leaves - knotted
1 tbsp rock sugar
5 cups water

Sauteed Portobello Mushroom

1 portobello mushroom - cleaned and sliced
1 tsp minced garlic
1 1/2  tsp sliced shallot
2 tsp chopped parsley stems
1 tbsp olive oil
1 tbsp butter
