Thai Eggplant Curry with Chicken
Ingredients
8 pcs Thai eggplant - washed and cut into halves
1/2 cup chicken breast cubes
2 fresh whole chilli - deseeded
1 1/2 tbsp thai red curry paste
1 tsp turmeric powder
1 small yellow onion - peeled and sliced
2 slices ginger
1 shallot - peeled and sliced
1 star anise

1 sprig curry leaves - use leaves only
2 cups fresh coconut milk

Braised Pork Rib with Bittergourd in Fermented Yellow Bean Sauce

1 lb pork rib
1 bittergourd - remove seeds and cut into slices

Wonton Mee Pok
Ingredients
for 2 pax
2 bundles of fresh mee pok
wonton - recipe refer to here
char siew - recipe refer to here
char siew marinade
2 stalks chye sim - blanched
Seasonings on plate (1 serving)
1 tsp chilli oil
1 tsp garlic oil
1 tsp shallot oil
2 tbsp char siew marinade
Method
for 2 pax

Seasonings on plate (1 serving)
1 tsp chilli oil
1 tsp garlic oil
1 tsp shallot oil
2 tbsp char siew marinade
Method
- Reheat char siew in marinade for 5 minutes or more. Set aside. Slice the char chew into thin pieces.
- Place seasonings onto the serving plates.
- Boil a pot of water. Blanch the noodles for a few minutes. Drain and rinse with tap water. Return noodles to hot boiling water and blanch for a while. Drain and place the noodles onto the serving plates and toss to mix well with seasonings.
- Place sliced char siew, wonton and chye sim onto the noodles. Drizzle the marinade from char siew on the noodles and garnish with fried shallot and green onion.
- Serve immediately with some chilli sauce and pickled green chillies.

Cast Iron Fried Chicken Cutlets
Ingredients
3 pcs deboned chicken thigh
2 tbsp soy sauce
2 tbsp mirin
2 tsp grated ginger juice
2 tbsp vegetable oil
toasted sesame seeds
Method
- Heat up oil in cast iron pan on high for 5 minutes.
- Place cutlets on pan and fry 5 - 8 minutes on each side.
- Transfer to a serving plate and sprinkle some sesame seeds.

Braised Tofu with Eggplant and Minced Meat
Ingredients
1 pkt firm tofu - drained and cut into cubes
1 eggplant - sliced
1 pkt brown beech mushroom - ends trimmed and separated
1/2 lb ground pork
2 cloves garlic - chopped
1 tsp ginger - minced
1 cup chicken broth
1 tbsp huatiao wine
1 tbsp oyster sauce 1 tbsp soy sauce
salt to taste
pinch of pepper
cornstarch solution
drizzle of sesame oil
vegetable oil
