Nonya Sambal Squid

Ingredients
1 packet Prima Taste Nonya Sambal (sweet & spicy chili Sauce)
6 squid - cleaned and cut into rings
1 small yellow onion - peeled and sliced
1 fresh chilli - deseeded and sliced
1 tbsp vegetable oil
2 tbsp water

Thai Eggplant Curry with Chicken



Ingredients
8 pcs Thai eggplant - washed and cut into halves
1/2 cup chicken breast cubes
2 fresh whole chilli - deseeded
1 1/2 tbsp thai red curry paste
1 tsp turmeric powder
1 small yellow onion - peeled and sliced
2 slices ginger
1 shallot - peeled and sliced
1 star anise
2 cloves
1 sprig curry leaves - use leaves only 
2 cups fresh coconut milk
2 tbsp vegetable oil

Braised Pork Rib with Bittergourd in Fermented Yellow Bean Sauce


Ingredients
1 lb pork rib
1 bittergourd - remove seeds and cut into slices
2 fresh red chillies - remove seeds and sliced
2 tbsp salted fermented yellow beans
3 cloves garlic  - unpeeled and lightly smashed
2 slices ginger
1 shallot - peeled and sliced into halves
1 star anise
2 cloves 
1 tbsp soy sauce
drizzle of sesame oil
vegetable oil

Red Bean Soup Dessert with Fresh Jujube




Ingredients
1/2 cup red beans - washed and soaked for a few hours or overnight
8 fresh jujubes (red dates) - washed and cut into halves
1 yellow sweet potato - peeled and cut into small cubes
1 dried orange peel
rock sugar to taste
2 pcs pandan leaves - knotted

Fermented Chilli Beancurd Chicken Nuggets (豆乳鸡块)






Ingredients
2 chicken thigh - deboned
sweet potato flour for coating
vegetable oil for frying
 
Seasonings for chicken
1 -1/2 cubes fermented beancurd
1 tbsp soy sauce
1 tbsp rice wine
1 tbsp minced garlic
pinch of sugar


Lor Mai Gai (糯米鸡)


Ingredients
1 chicken thigh - deboned and sliced
1 shitake mushroom - soaked, drained and cut into pieces
2 cups glutinous rice - soaked for 3 hours or more
1 1/2 cup chicken stock or water for cooking rice
shallot oil for greasing bowls

Stir Fry Squid with Mixed Vegetables


Ingredients
1 squid - cleaned, sliced criss -crossed and cut into pieces
1 small bell pepper - sliced
1 small carrot - peeled and sliced
1 small floret broccoli - separated
1 small cucumber - sliced
salt and pepper to taste
vegetable oil for stir frying

Wonton Mee Pok

Ingredients
for 2 pax
2 bundles of fresh mee pok 
wonton - recipe refer to here
char siew - recipe refer to here
char siew marinade
2 stalks chye sim - blanched

Seasonings on plate (1 serving)
1 tsp chilli oil
1 tsp garlic oil 
1 tsp shallot oil
2 tbsp char siew marinade
 
Method
  1. Reheat char siew in marinade for 5 minutes or more.  Set aside.  Slice the char chew into thin pieces.
  2. Place seasonings onto the serving plates.
  3. Boil a pot of water.  Blanch the noodles for a few minutes.  Drain and rinse with tap water.  Return noodles to hot boiling water and blanch for a while.  Drain and place the noodles onto the serving plates and toss to mix well with seasonings.
  4. Place sliced char siew, wonton and chye sim onto the noodles.  Drizzle the marinade from char siew on the noodles and garnish with fried shallot and green onion.
  5. Serve immediately with some chilli sauce and pickled green chillies.

Cast Iron Fried Chicken Cutlets



Ingredients
3 pcs deboned chicken thigh
2 tbsp soy sauce
2 tbsp mirin
2 tsp grated ginger juice
2  tbsp vegetable oil
toasted sesame seeds

Method
  1. Heat up oil  in cast iron pan on high for 5 minutes.
  2. Place cutlets on pan and fry 5 - 8 minutes on each side.
  3. Transfer to a serving plate and sprinkle some sesame seeds.

Braised Tofu with Eggplant and Minced Meat


Ingredients
1 pkt firm tofu - drained and cut into cubes
1 eggplant - sliced

1 pkt brown beech mushroom - ends trimmed and separated
1/2 lb ground pork
2 cloves garlic - chopped
1 tsp ginger - minced
1 cup chicken broth 

1 tbsp huatiao wine
1 tbsp oyster sauce 1 tbsp soy sauce
salt to taste
pinch of pepper
cornstarch solution
drizzle of sesame oil
vegetable oil
