Delicious duck confit courtesy of my home chef :P
Ingredients
2 duck leg quarters
1 tbsp black peppercorn
1 tbsp salt
1 tbsp coriander seeds
1 bulb garlic - halved horizontally
few slices ginger skin on
4 dried chillies
1 tbsp duck oil - rendered from other parts of the duck
Method
- Pound salt, coriander seeds and black peppercorn. Season duck leg quarters with the pound uningredients for 12 hours or overnight.
- Shake off seasoningk ks. Place duck in slow cooker. Add ginger, dried chillies and halved garlic.
- Slow cook for 4 to 5 hours until meat is tender.
- Broil in oven until skin is crisp and golden,
- Enjoy the delicious duck confit with baked potatoes and some salad greens.
