Ingredients
1 medium-sized daikon/radish - cut into cubes
600g pork belly - cut into cubes
few slices ginger
2 cloves garlic
3 stalks of spring onion
1/3 cup sake
1/3 cup soy sauce
3 tbsp mirin
white pepper
1 cup water
1 tbsp oil
Method
- Heat up oil in a pot. Saute ginger and garlic until fragrant. Add pork and brown on all sides.
- Add soy sauce, sake, mirin and water. Bring to a boil, lower heat and gently simmer for 1 hour..
- Add daikon and submerge them in the sauce together with the pork. Simmer for another hour or until pork is tender. Sprinkle some white pepper.
- Ladle into a serving bowl and garnish with chopped spring onions.
- Serve with steamed rice.
