Ingredients
1 lb mussels - cleaned and debearded
1 tbsp olive oil
1 tsp garlic
half onion - coarsely chopped
1 tbsp butter
1/2 cup red wine
1 tomato - chopped
some chopped parsley
2 servings of spaghetti
pinch of salt to cook spaghetti
Method
- Bring a pot of water to boil. Add spaghetti and salt and cook till al dente. Drain and set aside for use later.
- Meanwhile heat up oil. Melt butter in oil.
- Add chopped onion and garlic. Add 3 tbsp of tomatoi sauce. Add chopped tomato.
- Add red wine and bring to a boil. Add mussels and cover for a few minutes or until all the mussels are opened. Add cooked spaghetti and toss to mix.
- Transfer to a serving plate and sprinkle with some chopped parsley.
- Enjoy the delicious meal immediately!
