Weber Grilled Roast Pork
Ingredients
2 medium slab of pork belly (abt 800g)
1 tsp garlic powder
1 tsp white pepper
1 tsp 5 spice powder
(for one slab of pork belly, use half of each of the seasonings)
For brining the meat
1 tsp salt + 1 tsp sugar
For scalding the rind
2 cups water + 2 tbsp vinegar

6 wooden skewers - soaked in water for 20 mins

1 tbsp honey
4 tbsp oyster sauce
5 tbsp ketchup

Spicy Thai Chicken Curry
Ingredients
1 lb chicken breast (boned or deboned) - cut into bite-sized pieces1 tomato - chopped
3 shallots - sliced
1 stalk lemongrass - white part only - chopped
2 tbsp dessicated coconut
2 tbsp thai red curry paste
1 tbsp sambal belachan
5 thai green chilli pepper
2 dried bay leaves

3/4 can coconut milk

1 packet of soft tofu - cut into large pieces
1 tomato - cut into quarters

Coq Au Vin (Chicken Braised in Red Wine)
Ingredients
3 lbs chicken3/4 bottle red wine
3 slices of bacon
1 small stalk of leek - sliced
2 small sticks of carrot - cut into pieces
20 pearl onions - peeled
1 small packet of beech or button mushrooms
2 bay leaves
2 tbsp tomato puree
plain flour for coating chicken
1 tbsp chopped parsley
salt and pepper to taste

Butter Cake
deliciously moist and buttery cake....sinfully good....
recipe adapted from rasa malaysia
Ingredients
2 sticks (230g) unsalted butter, at room temperature
7 oz (200g) plain flour/all purpose flour
1 1/2 tsp baking powder
7 oz (200g) castor sugar
4 large eggs
½ tsp salt
6 - 7 tablespoons fresh milk
7 oz (200g) plain flour/all purpose flour

1 teaspoon vanilla essence
Method
1. Preheat the oven to 375°F.
2. Lightly grease the pan with some butter.
3. Mix the flour and the baking powder together and sieve. Add in salt and mix well. Set aside.
4. Use an electronic beater to mix butter and sugar until well combined or pale yellow in color. (Note: Sugar has not dissolved yet).
5. Add in the first egg. Beat well after each addition of egg until creamy.
6. Scrape down the sides for even mixing.
7. Add in vanilla essence and mix well.
8. Fold in the flour into the mixture and mix well.
9. Finally, add in the milk.
10. Pour the mixture into the greased baking pan. Shake it lightly to distribute cake mixture evenly.
11. Bake until golden brown and cooked, about 40 to 50 minutes. Use a cake tester to test if it’s cooked.
12. Remove it from the oven and let cool on the wire rack for another 5 minutes. Serve warm.

BBQ Pork Back Rib
super tasty, fall off the bones bbq back ribs! no time for more pixs as our 2 guests had arrived. All gone in a jiffy except the bones.....
