Weber Grilled Five-Spiced Chicken


Ingredients
1 chicken (use half of it)
1 tsp five-spice powder
3 tbsp soy sauce
1 tsp sea salt
honey (dissolved in 1 tsp soy sauce)
few slices of pineapple

Method
  1. Marinate chicken with five-spice powder, soy sauce and sea salt.
  2. Preheat weber grill to 400 degrees F.
  3. Place chicken on preheated grill and reduce temperature to lowest. Cover and grill for about 30 minutes.
  4. Remove cover and brush honey soy sauce mix onto chicken.  Cover and grill for another 10 to 15 minutes or until the internal temperature reads 165 degress F.
  5. Remove chicken from grill and serve chicken with some BBQ pineapple slices and chilli sauce.

Ingredients
(for 2 pax)
fresh yellow noodles (i use sphaghetti)
1 small bunch beansprouts (i omitted this)
1 large pc chicken breast (bone-in)
1/2 onion (peeled)
1 small pc ginger (peeled)
2 cloves garlic (peeled)
1 stalk lemongrass (white part only, bruised) 
1 small pc galangal (sliced, bruised)
1 small pc cinnamon stick
2 cloves
1 star anise
1 tsp turmeric powder 
2 cardamom (1 omitted this)
1 pot chicken stock
salt and pepper to taste
few stalks of parsley (chopped)
1 green chilli (sliced)
fried shallot
fried shallot oil
1 tbsp cooking oil

Begedil (Fried Potato Patties)

I always order begedil when having my nasi lemak meal.  I love these potato patties, and this is my first attempt at making them.  I used yukon potatoes as they hold better when shaping. 
And instead of the usual deep frying, I opted for pan frying.  I think I made the patties a tad too big though, they were tasty but would have tasted better if they were smaller in size.


Ingredients
8 small yukon potatoes
2 stalks green onion (chopped finely)
a few stalks cilantro (chopped finely)
salt and pepper to taste
3/4 tsp turmeric powder (optional, for extra flavour)
6 small shallots (peeled and sliced)
1 large egg (beaten into a bowl)
oil for pan frying

Deep Fried Cod with Panko



Ingredients
1 lb cod fillet (washed and pat dry)
2 small eggs (beaten into a bowl)
salt and pepper to taste
plate of flour for coating
plate of panko for coating
oil for deep frying

Method
  1. Cut the cod fillets into big chunks. Season with salt and pepper.
  2. Coat the cod with flour on both sides.  Shake off excess flour.
  3. Dredge the cod into the bowl of beaten eggs and let any excess egg drip off.
  4. Place the cod onto a plate of panko and coat both sides with it. 
  5. Repeat with all other pieces of cod fillet.
  6. Heat up a frying pan with oil on medium high. Temperature is reached when a bread crumb turns brown when fried.
  7. Place the coated cod into the oil and fry till golden brown on both sides.
  8. Remove excess oil with paper towel and serve hot with your preferred side dishes.

Pork Liver Soup with Spinach

Ingredients
1 small piece of pork liver
1 small piece of lean pork (blanched and sliced thinly)
1 small bunch of spinach (washed and cut)
handful of wolfberry
1 pot chicken stock
salt and pepper to taste
1 tsp baking powder and 1 bowl water for soaking pork liver

Vegetarian Stir Fried Leek with Mushroom

Ingredients
1 small stalk leek (sliced and separate white part and green part)
1 small carrot (peeled and sliced thinly)
10 white mushroom (sliced)
1/2 red bell pepper (sliced)
1/2 white onion (sliced)
2 cloves garlic (chopped)
1 tbsp soy sauce
1 tbsp huatiao wine
salt and pepper to taste
1 tbsp oil

Grilled Pork Chop with Sweet & Sour Sauce

 Ingredients
2 pcs pork chop
2 tomatoes - quartered
some slices of yellow bell pepper
1 jalapeno - deseeded and sliced
5 dried red chill
1/2 cup frozen green peas
1/2 white onion
2 shallots
1 tsp minced garlic
2 tbsp ketchup
3/4 tbsp vinegar
brown sugar to taste
salt and pepper to taste 
cornstarch solution
salt water for brining
1/2 cup water
cooking oil

Pan Fried Minced Meat Tofu

I learnt this dish from my mum.  She deep fried the tofu and they were very crispy and delicious, but I opted for the healthier version of pan frying them.

 Ingredients
1 packet soft tofu
150g minced meat
8 medium sized prawns - deshelled
1 large egg
2 stalks green onion - chopped
2 red chillies - remove seeds and chopped
2 tsp sesame oil
salt and pepper to taste

BBQ Lemon Chicken with Herbs

Ingredients 
1 free range chicken (i use half of it)
rind of 1 large lemon
juice of 1 large lemon
few springs of parsley - chopped
1 tsp dried rosemary - pounded
freshly grounded black pepper
2 tsp dijon mustard with seeds
1 1/2 tsp sea salt
1 tbsp soy sauce

Baked Eggplant Appetizer

Ingredients
2 medium-sized eggplant
1 red chilli - chopped
2 tbsp soy sauce
1 1/2 tbsp apple cider vinegar
3 cloves garlic - chopped
few sprigs of parsley  - chopped
1 tbsp sesame oil
